Making Fudge Today

Well, I couldn't resist making fudge using Dad's (Papaw's) recipe on this cold bright winter day.

In my Mom's (Gammy's) handwriting here it is:

2 C sugar
2 sqs bitter chocolate
2 T white Karo (plus 1 t maple syrup is a variation I like)
2/3 C whipping cream
dash salt
1 t vanilla
1/2 C chopped nuts (I used walnuts and think more is better)

Soft ball (beat constantly over medium heat)
Pour in cool pan
Beat in 1/2 stick butter until satin (Dad said 'hard')
Pour on cold flat dish (I use marble)
Cool 1 hr (if you can wait)

(I add 1 T Napoleon Liqueur with the butter)
